US cheese production hit record high
As per the data released by the USDA’s National Agricultural Statistics Service (NASS), the total cheese production in the US for 2025 amounted to a record 14.66 billion pounds, which is an increase of 2.9 pc or 411.4 million pounds compared to the previous year. Since 1997, US cheese production has doubled from 7.33 billion pounds and has not seen a decline since 1991, when the output was 6.055 billion pounds, a decrease of 4.6 million pounds from 1990.
In December, cheese production reached 1.28 billion pounds, marking a 6.7 percent rise from December 2024. The increase represents the second consecutive month in which cheese production rose by more than 6.0 percent; November’s production had increased by 6.5 percent compared to November 2024. As a regional wise in US, Central region produced 662.6 million pounds, an increase of 10.8 percent; the West region produced 479.0 million pounds, up 1.6 percent; and the Atlantic region produced 137.2 million pounds, reflecting a 6.0 percent increase.
As reported by NASS, in December 2025, cheese production across various states, remained as Wisconsin at 315.0 million pounds, an increase of 2.8 percent; California at 216.6 million pounds, an increase of 5.8 percent; Idaho at 88.2 million pounds, a decrease of 4.4 percent; New Mexico at 78.1 million pounds, an increase of 6.0 percent; New York at 72.8 million pounds, an increase of 12.5 percent; Minnesota at 72.5 million pounds, an increase of 5.1 percent; Pennsylvania at 37.7 million pounds, a decrease of 0.8 percent; Iowa at 35.3 million pounds, an increase of 4.6 percent; Ohio at 22.9 million pounds, a decrease of 0.9 percent; Vermont at 13.2 million pounds, an increase of 0.3 percent; Illinois at 9.6 million pounds, an increase of 30.9 percent; and New Jersey at 9.1 million pounds, an increase of 1.3 percent. Thus, the total cheese production in all other states for December reached 307.9 million pounds, reflecting a 16.8 percent increase from December 2024.
